Leg Quarters all the same leg?

Whenever I buy a bag of chicken leg quarters, get up close and personal with them while removing the skin, and then later arranging them to be baked/grilled, I keep on getting confused about something and that is which side is the leg quarter from.

Look at this picture:


These are 2 leg quarters from the left side (correct?) of the chicken. So these obviously came from 2 different chickens.

What I don't understand when I do all my chicken prep is, in those bags, all the leg quarters are from the same side of the chicken. I thought this was weird when I prepped the chicken from the first bag I did a while back. Then just yesterday I saw it again, each and every leg quarter was the right side.

You have no idea how much this confused me. I knew there had to be a leg quarter that had the mirror image of the ones I was preparing and yet none were in these bags. Because of this I thought that I was interpreting it wrongly and the left and right sides are the exact same. But I knew that couldn't be the case.

Here's a pic to prove it:


So one leg quarter from the left side is definitely a mirror image of one from the right side.

Ok. That's out the way.

So I am wondering: Is there any reason that there were two bags of chicken full of leg quarters form only one side of the chicken, or did I just get lucky?


The only hypothesis I can come up with is who ever cuts the meat has a setup where they make legs and thighs from only one side of the chicken, leaving the leg quarter from the other side intact...and in the bag...and for sale...and for my confusion.

i've noticed this, too...i always assumed same side quarters were easier to package together because they sort of "nest" together better

Cut the bird right up the middle, two conveyors, one goes left one goes right.

This is it. I was at a seminar once with several guys from the chicken processing industry and that was what they said.

it's all the steroids in modern chicken feed, and the market of the target customer.. same side legs, and extra gizzards are not uncommon..

Chicken, cane knife, object to hold chicken upon as cane knife meets neck, one minute of pure, unadulterated, gut wrenching laughter for the children of course. This would be considered animal and child abuse today. Now, where can I find a chicken I need a good laugh.

I dunno; "Gator" is bi-sylabic and he is saying something tri-sybalic. And his tong doesn't appear to be doing the "ga" movement for "gator."

However, I do understand the strong association with chickens and left leg quaters.
