Leftover Ideas - Smoked Duck Breast

Smoked some duck breast yesterday for a tailgate and have about a pound or so of leftovers. What would you suggest I make with the leftovers.

I also have almost a pound of dove breast as well.

Duck breast salad, thinly sliced over a mix of spring greens, romaine, plum tomatoes, creamy raspberry vinaigrette, with fresh basil leaves. Dove, go with either a stew or a sauce picqante

Make a hash. Saute a little trinity in butter until soft, add garlic, then diced carrots and potatoes. Add some chicken stock and a little flour mixed in stock to thicken. Add diced dove and duck. Season with salt, pepper and a bay leaf then simmer.Add green onion and parsley when thickened and ready. Serve over hot biscuits and/or rice.

I probably havent made a sauce picquante in 20 years. That may just be the ticket. Thanks.

Smoked duck tacos would be a good idea as well.
