When Copeland's first opened, blackened red fish salad was on the menu served with a creamy type dressing like a ranch, but I don't recall whether it was actually ranch. I remember the salad was really good, though. The fish wasn't flaked. There were chunks, I believe.

Cousin's creole tomato dressing would be good on that salad if you live in this area.

A light citrus honey vinaigrette . Something just a touch sweet , don’t take the fish being the main ingredient away.

Hanley's Sensation Dressing almost always goes well with seafood.

Could also make a dip.
