Picked up two of these on sale at the store today. Was looking around for some recipes. Perhaps a vindaloo?

Braised Venison Shank Adobada Recipe

I did this with wild hog and it was delicious. I bet lamb would be great as well.

I have an excellent recipe for lamb stew, courtesy of my Israeli friend. Happy to share the recipe if it's something you're interested in. Full of barley and veggies of your choice.
