I usually do a couple of these

Grilled veggies—do some zucchini, eggplant and yellow squash slabs, and some whole skinny carrots and onion slices. Grill them first, before the chops. While the chops are cooking, toss the grilled veg with a simple vinaigrette flavored w mustard, parsley, red wine vinegar, etc.
