Kaz fans: He's finally opening up his Omakase only restaurant in the Bywater

He's looked at a bunch of locations. He thought about one near Prytania but I don't think it was ever close.
He's been circling this Bywater location for awhile now.
Like I said, its a risky concept so they probably wanted at place with very low rent. Only two seatings a night, 12 spots per seating, and you can get out of there for as low as 45 (although I imagine most people will upgrade and order sake as well).
You can't order crunchy rolls and a clear soup. It is a multi-course tasting menu (with no menu) with only some very basic guidance from the customer.
I'll be there week 1 if I can get in, and the first few weeks will be crazy as the dude has basically a rockstar following locally. But after the first few weeks I'm interested to see sustainability.

Location I'm thinking about is across from Zara's. It is a tiny place. I'd imagine rent is much less in Bywater

They had a sushi place across from Zara’s for a few months, but it closes about a year ago. It was pretty good and seemed busyish.

I believe that was former Kyoto people that opened that.
Kaz was the main guy at Shogun until 2016 and has been doing expensive popups (that are all soldout well in advance) since then.
Been looking for a spot to do this concept for awhile. I hope it works out.
