I know, but when I go to a steakhouse, I expect cut steaks.
I rarely order steaks out though, unless at a steakhouse (that dry ages)
If OP would have just asked to talk to a manager he wouldn't of had a "nightmare"
Sounds like service was actually good. But if I don't eat my meal, I'm not going to pay for it.
He did not need to take the raw steak. He decided to be "Beta" about the whole incident.
I can see maybe not sending it back if someone else was picking up the tab and THEN not wanting to make a scene. But if I am paying $140 for food I want to enjoy it.

This is a strange statement if you are associated with the restaurant. It suggests that Juban's is not the place to go in a group and though it apparently allows groups and allows groups to get separate checks, it can't handle those situations well or it's, at least, not recommended.
While group dining is rarely the optimal experience and separate checks for group dining can be trying, if a restaurant offers both, the restaurant should be able to handle both. This isn't exactly an inviting response, in my personal opinion, regardless of the drama expressed by the OP.

FWIW, I've never had a bad time at Juban's. I mostly sit at the bar to eat b/c i rarely have a rezzie, and am happy after a couple of beer/glasses of wine then food. The staff is over the top friendly. Maybe you didn't have enough to drink? One glass for 2-3 hours would be painful.
There's just too much questionable stuff here:
Why not ask for Medium rare if that's what you like? Why the caution? In my experience the usual screw up on steaks is overdone, not undercooked.
Why not? You paid for a steak, so get it how you want it. Since you were OK with talking to the waiter in the hall about the bill, why not just tell him to surreptitiously go pick up and fix the steaks?
Seems like a looooooooong time, which could have been used to fix your steaks. Also made longer by only having 1 glass of wine.
With the auto 15% tip for large parties, $140 equates to about $120 for 2 salads, 2 steaks, 2 glasses of wine and two desserts. I'd guess it wasn't barefoot wine. Not all that bad, IMHO. Just be a little more assertive next time to ensure that your meal goes as expected.
