Jane’s Seafood in New Iberia

Went for dinner last night. Nice place, crowded and good service from the waitress. I seem to recall a thread a while back about dusting crawfish with seasoning and how it was frowned upon. Jane’s did this and it’s the first time I’ve eaten them this way. Do they do this because they don’t soak or is it a thing in this town?

Jane's Seafood is a New Iberia staple. The new building is really nice.

"Swamp dust" is a staple in the areas west of the Atchafalaya. I don't understand it.
