Yeah, I dont really follow that crowd, I do not do the cooking on wood fire and all, so I am not aware of any but after the festival they will have the swamp pop, the boucherie fest and the wounded warriors cook off (all on propane) and I will try and cook in at least 2 of those

I think we are good, doing 100 pounds of rice, my BIL has a big pot that we will cook 60 pounds in, then my 20 gallon we will do 25 pounds in, then a smaller pot with the last 15 pounds, first time doing 3 pots with the 2 of us but it should be fun, weather looks great

Honestly, I dont have a clue, I think it will be some of each, I am just cooking, others are in charge of sales and distribution. From what I understand they will be at the Denham and O'Neal walmarts doing the same for a total of 2100 plates

I'm cooking in the Heart Walk cookoff at LSU next Saturday.
There is also a Crawfish boil\Jambalaya\Cracking cookoff that same day at Lamar Dixon to benefit Dreams Come True.

Jambalaya cook offs are stupid because they restrict the ingredients you can use. You get a bunch of jambalaya that taste the same.
They should let people use whatever they want even if it isn't textbook Cajun jambalaya.
I would rather a variety of creative dishes.

Glad you were able to support it, hope you got some out of the first pot, we had a few mechanical issues that challenged us on the next pot
Anyway, just heard that they sold 2000 plates between the 3 stores at $8/ and everything was donated (thanks to wal mart for just about everything and a shout out to Kim Leblanc' who donated the seasoning)
No official tally on the donations that came in on top of the sales
Nice to see the outpouring of support from the community, lets me know that there is still some good left in this world

Tavern cook off is end of April. Last year the had around 80 cooks. It's a benefit for wounded wear, a company that makes prosthetics for disabled veterans.
