Jambalaya cooking contest

Sunday June 28 at tiger tavern (Daquri shop on 44 next to Ralph's in Gonzales)
$50 donation / entry fee, proceeds to go to wounded warriors type organization
5 lb rice , cooks supply ingredients for first round, D& J grocery supplies for the finals
8 pots in final round
JFA judges

Will be my first contest, hoping I can get someone else in that will be their first too so I might not come in last place

I got an email today from someone that said they just bought a 40 gallon pot. He said he never cooked more than 5 gallons, and he wanted me to modify the calculator to handle up to 40 gallons.

Since the calculator only handles up to a 25 gallon pot, what liquid ratio would you Jambalaya gurus recommend for a 40 gallon pot?

On gas burner? I'm not ready for wood yet. I know it's only 5 pounds so I doubt wood but just wanted to check.

My buddy cooked at a smaller one put on by the JFA for the VFW in Gonzales a couple months back, he said the judging part was not taken serious at all and he got the impression they basically randomly selected winners...so if you're doing it for practice, then do it for practice.

Rat, when I cook 40 lbs of rice, I use 8 gallons of water. I think that comes out to a 1.6 : 1 ratio. I also use the same amount of onions as rice and 40 lbs of onions makes a lot of water.

Well, 40 lbs of rice is 100 cups of rice. 8 gallons of liquid is 128 cups. So, you're using a 1.28 to 1 ratio. Makes sense for a pot that big. Thanks for the info.

Thats the same ratio we use….1 gallon of water for every 5lbs of rice.

You're right. I used 2 cups rice per pound instead of 2.5 in my calc.

I assume so, going to get crowded with 40 ish pots, guess that is one reason for doing it on a Sunday morning

14.25 quarts is an awful lot rat, in fact my usual ration of 1 quart per 1 pound of rice seems to be too much water lately

I would go with Tigerpaw's advice of 2 1/2 gallons. We both use 1 gallon per 5 pounds of rice. 12 pounds would technically call for 2.4 gallons of water but 2.5 won't make any difference.
