I want to make some Italian sausage. Where can I find the TD cookbook? Assuming it has a recipe.

here

This one works:

2 teaspoons dried parsley

2 teaspoons Italian seasoning

1 1/2 teaspoons black pepper

1/2 teaspoon fennel seed (I use whole, but you can crush if you like)

1/2 teaspoon paprika

1 teaspoon red pepper flakes

2 teaspoons salt

1 tablespoon minced garlic

1 teaspoon minced onions

2 pounds ground pork or chicken

Here's the one I use and everybody who's eaten it loves it.

This is good for 5 lbs. of ground pork.

2 tbsp. salt
1 1/2 tbsp. fennel seed ground in a mortar and pestle to break it up
1 1/2 tsp. Anise seed
2 tbsp. black pepper
1 tsp. red pepper flakes
1 tsp. coriander
1 tsp. caraway seed
1 1/2 tbsp. garlic powder
1 cup ice water

Mix all seasonings and water into the pork until well blended. Italian sausage is the only one I do not case up since I mainly use it in loose form for red gravies when adding meatballs or for a lasagna gravy.

It will case up easily in the above form.

The cookbook is stickied at the top of the page. Not sure it has what you’re looking for though.

There are multiple YT videos on the subject. I combined several of them when I made it. Homemade sweet Italian sausage is the tits! Lots of fennel.

Just a tip. Every time I make it, I'll take a bit of it and make a patty and fry it to taste to see if it needs tweaking. Usually doesn't, but it won't hurt for you to taste test it the first time to see if you want to add anything else.
