Do I have to mail order Ezzo pepperoni or other natural casing pepperoni, or am I just not looking in the right places? I bought an Oooni Koda 12" and I'm going to be making *lots* of pizza.

River parishes, work in Orleans. You the guy with the pizza restaurant? If so, those are tasty pies. Happy to buy a few pounds of pepperoni from you.

We can make that work, I know it can be hard to find quality ingredients

I know it's not as good as Ezzo, but for locally sourced it's not bad. I get a Boar's Head pepperoni stick or Margherita brand and slice up into pepperoni pieces and they end up cupping properly and tasting better than the pre-sliced bags of pepperoni.

That's good to know. I think I can find the Boar's Head sticks.
