Is there a difference in quality between a regular cut ribeye and a cowboy cut ribeye?

or is this just a gimmick to sell you the weight of the bone at the price of the actual ribeye's meat.

Not a difference in quality, but in quantity. Usually, a bone in ribeye is what's called a "double cut." It has the same amount of meat on each side of the bone. A true "Cowboy" cut steak will look like a 2 1/2" thick roast.

Could be the same grade, or maybe not. Same grade, the cowboy cut should be less expensive.

Quality is in the grade of meat.

Only a Paul Allen believes quality is measured by the length of the bone.
