Every word of this.

You have to know how to do Galatoire's to get the full experience IMHO.
The food is good , the service is good, but here what I do for an enjoyable time:
-Dress nice, everyone there will be dressed up. I believe they still require jackets for men.
-Try to get the name of a waiter ahead of time and see if he will be working when you go. This will let restaurant know that you have an idea of how this place works.
If you don't have a waiter, ask someone who goes regularly. -Start off with a cocktail and some souffle potatoes. This is going to be somewhat of a marathon and you don't want to rush through it, so sit back and relax.
-After that have some shrimp remoulade or the eggplant sticks, again, no hurry. Baked oyster dishes are good too. -I think their fish dishes are some of the best things on the menu.
Ask the waiter what type of fish he recommends today and just order based on his remarks. He's in the kitchen and sees what comes in nice and what doesn't.
-If you have room for dessert knock yourself out. They are all pretty good with a nice cup of coffee.
-Really try to sit downstairs if you can. It's going to be loud and a little rowdy, but that is all part of the deal. Just my opinion
