I have had an induction cooktop for 4 years now. I love it.

There are only two cons compared to gas, you do have to think about cookware and you can't roast peppers on your cooktop.

Pros over gas, doesn't heat your house, easy to clean, and safer (especially with kids).

I have carbon steel skillets, a non-stick Volrath skillet, an enameled dutch oven, and a set of relatively inexpensive T-Fal stainless pots that I got from Walmart.

The big limiter on pots is you can't use any of the anodized aluminum cookware that has gotten so popular over the past decade. The only thing that is somewhat difficult to find is a non-stick skillet that doesn't cost a lot.

The feel of cooking is almost the same as gas. The response to temp is instant. Since its a smooth top you probably wouldn't want to use plain cast iron because it might scratch the top. However, you can do some really cool stuff as well. When frying stuff you can lay out newspaper or paper towels on the cooktop to catch all the oil splatter making clean up quick and easy.

The stove it hot to the touch where a pot was when you moved it, but not enough to instantly burn you. This is great when it comes to kids in the kitchen.

I think I may travel to Houston to the Woolf showroom and try one out.

I've cooked on both. Have a friend who is a chef level cook and he went with induction. With an open kitchen layout and several young kids, safety was a concern with gas. The nice thing about induction is you can touch it and it's not hot (unless there is residual heat from a pot).

With a quality range, the temperature range is comparable to gas, save for a massive burner some high end ranges offer. My friend has no complaints. I've used an induction single eye during renovation work.

If you have a galley kitchen or other tight space, the induction range will not produce a lot of ambient heat - there's no heat loss.

Given the choice, I'd prob still do a nice gas range. If I had no choice, induction is fine. It's actually easier to use and clean.

Have cooked extensively on both. Would have ripped out the induction and replaced it if I hadn't been moving so soon. No control over the heat unless you are into moving your cookware on and off the burner and waiting.

What brand of induction cooktop did you have? Would you consider it high end? Thanks.

Search for a La Cornue Versailles range, it is a bargain at just under 100 K.

Don't remember. It's been over a decade, and I've had a couple of beers since then.

It was what I would consider a high end home on the Northshore with a kitchen full of upgrades. I'm sure it wasn't something purchased at Wally World, but it wasn't a $25K unit either.

Hey, just because you can't control the heat doesn't mean that I can't. If I had any heat control problems I'd go back to gas. I've never had anything over done or underdone.

Funny story. I knew one lady who complained that her glass top cracked.

Me: "Dropped a heavy pot on it?"
Her: "No, I was standing on it with high heels."
Me: "WHAT????"
Her: "I was trying to reach something in a high cabinet above the range."
