I got mine for $400, but they are hard to find. Check this out:

I went down the proverbial "rabbit hole" watching Japanese guys taking huge tuna apart for the fish markets.

Some of the knives they use to filet the tuna are in the 36+ inch long range and are sharp enough to shave with. Those guys have specialty knives to make that work go quick and when they are done the carcass may have enough meat on the bones to get a few cans of tuna out of it.

I also watched a Korean meat market butcher totally cut up a half hog on a stainless steel table with a curved bladed knife, also sharp as a razor that made the work look easy.

The skill and speed these guys work is incredible. He was fileting out very thin slabs of meat from between fat layers like it was nothing, and getting them out clean with little fat remaining on them while using a knife most Americans would not think of using due to its design.
