I've never made a batch this large before. How many pounds of shrimp and crabmeat should I use? I don't use sausage or chicken or any other meat. I'm thinking maybe 3-4 pounds of crabmeat and maybe 6-8 pounds of shrimp? Also do you think 2 cups of roux is enough or do I need a little more? Thanks.

Hard to answer unless we know how much gumbo you’re making. What size pot?
In a normal stove pot, I’d use 2 pounds shrimp and 1 pound crabmeat.
My jar roux in a gumbo calculation is:
Per 1 quart of water in the recipe:
1 quart water
2.5 ounces (weight) jar roux
or 9.375 teaspoons jar roux

Yeah this is hard. Any other food?
2 gallons would be about a cup and half (12oz) for each person without rice.
I’d think I’m terms of that…what is your normal yield? Like how big is the pot you currently use? Use that as a starting point, how much do you put in for your normal yield and then just multiply.
If it’s a party and there will be other food I’m thinking 2-3 gallons would be more than fine. People don’t eat as much at social functions. Your normal amount is probably enough for 10 people in a social setting
