I've tried a few at tailgate parties... awesome. Never made one myself, though. Good luck and post pics!

And smoke it if you can... might be too late.

Pictures to come.

I only have a gas grill so I can't smoke it. I'm adding some liquid smoke to the recipe. I'm going to cook the inner bacon now and roll it up to cook later. I work nights so I will cook it when I wake up.

I've done different versions of "fatties" which seems a lot like this. I've done em with cheese and veggies inside,cheese and jalapenos and one i call a pizza fatty with pizza sauce,pepperoni and mozzarella. They're pretty damned good. And as Carramrod says, if you cook it slow, you it won't burn. I think I need to give this one a shot.

Yeah, once you get the bacon weave thing down, you can get pretty creative with what you wrap with it.

I'm pretty sure it was Chisesi Ham and I think some sausage but cant really remember

Here it is rolled up. As you can see, I need either more bacon or less sausage. I'm going to have to go with it as is this time. I have to get some sleep so I can get up to cook this thing and watch the LSU game.

less sausage

use a gallon bag to mold your sausage

skip the liquid smoke

you must definetly can (and should) smoke it with your gas grill..just get a little pan and put some wood in it above a burner ....low and slow

I'm curious how this turns out with italian sausage...i love italian sausage but combined with bacon sounds weird ....wait, is that possible for anything to not be good with bacon you're probably OK

Sounds pretty similar to this bar (Paddy Long's) in Chicago. They also have beer and bacon tastings...

I just make smoke pouch out of foil. works every time.
