You don't even need to refrigerate it. It's salt cured. I would do the same thing though.



I haven't been through in a while, but we used to stop at their place in Tennessee on trips up to North Carolina and buy a bunch directly.

The car would smell of it for weeks.

Been loyal to Wright's Applewood for a few years now. This thread told me to be on the lookout for the Pecan wood variety. Didn't know it existed. I now have a quest for the weekend.
