All good dining spots.
I live very near Dark Roux, but due to traffic, don't eat there very often.
My son will be a freshman at UL next year.
We could/should grab a lunch when you're in town, with or without those other Lafayette losers

Ranch + Tabasco Chipotle - It goes great with just about everything.

Give us an update when you can.
I wish I had simply "melted" the pepper jelly.
Instead, I followed a recipe that said to whisk Creole mustard and champagne vinegar in with the pepper jelly. I didn't have champagne vinegar, but the recipe also said that apple cider vinegar was an acceptable substitute.
I didn't like it and it all went in the trash, despite my New Year's Resolution to waste less food.
I took the bites to the meeting without sauce and people seemed to enjoy them.
When I make them again (and I will tweak the recipe), I will figure out a good sauce ahead of time.

I appreciate your update.
My first instinct was to say that you didn't need a spread or a dip.
Your attempt at making a dip failed miserably, and you reported this is as it was.
Props to you for truth in reporting , as always.
