I HATE baking. I'll make homemade but Pioneer works for me. I heat the cast iron skillet and the oil in the skillet. Tastes mighty fine to me.

The stoneground meal is the best. An uncle in Ruston used to grind it, and I was able to make cornbread the proper way...and it was excellent...unmatched flavor and texture.

You really need to get over your oven phobia/avoidance Gris. There are way too many good and tasty things that it can produce.

Not a phobia. Just don't enjoy it. Love the outcomes, though. I like Pioneer cornbread. It's good.

Cornbread should be salty and buttery delicious goodness. Sweet cornbread is a negative.

People that use Jiffy mix are bad enough by themselves, but people that put sugar into the batter should be smacked in the head with the hot cast iron skillet fresh from the oven and containing hot oil. The life time scarring that would provide might teach them a lesson.

Generally, I don't care for sweet cornbread, but it has it's place in certain dishes. I actully use Jiffy over a creamed chicken recipe I have because the Jiffy works just as well as the recipe for sweet cornbread that goes with the chicken. I made the one in the recipe and it tasted a lot like Jiffy. Savory cornbread doesn't work as well. I don't like sweet as a side to a regular meal, though.

We use the Pioneer Woman recipe. Think we use Quaker cornmeal...you can find it in most grocery stores.

I think sweet cornbread goes best crumbled over some red beans and rice. Only time i prefer sweet.
