I made Coq au Vin.....

So freaking good. Soaked chicken for 12 hrs in the wine.
Recipe below.





RED WINE CHICKEN MARINADE:
4 chicken thighs , bone-in, skin on
4 chicken drumsticks
16 pearl onions or picking onions
1 bay leaf , fresh
3 thyme sprigs (sub 1 tsp dried thyme)
3 cups pinot noir red wine , or other dry red wine

BROWNING CHICKEN:
3 – 4 tbsp vegetable oil (or canola oil)
3/4 tsp salt (cooking/kosher salt, or 1/2 tsp table salt)
1/2 tsp pepper

COQ AU VIN STEW:
14oz baby bellas mushrooms , halved (quartered if large)
5oz bacon piece
4 tbsp unsalted butter
3 garlic cloves , finely minced (with knife)
2 tbsp tomato paste
7 tbsp flour , plain / all purpose
3 cups beef stock , low sodium, preferably homemade
1/4 tsp salt (cooking/kosher salt, or 1/8 tsp table salt)
1/4 tsp black pepper

GARNISH AND SERVING:
2 tbsp parsley , chopped

Very nice. I've made it once and it is a delicious dish. Comfort food at its best.

One of my weekly responsibilities was cutting & brining chicken for this plat du jour. We called it purple chicken or purple cock in our kitchen.

Your sauce looks great! Did you thicken it with anything like a roux or slurry?
