Looks amazing. I'm a huge fan of that Karys. I've won several cookoffs with it over the years.

First step is roux. Then trinity into roux to stop roux cooking
I'm fine with tomatoes, I grew up on creole gumbo. But you HAVE to have trinity+garlic.


I live alone now and sometimes I'll use Blue runner gumbo base+trinity+shrimp, crabs and sausage to do a quick 10 minute gumbo.

Do you brown sausage first then remove before adding chicken? Do you add any other trinity/seasonings/veggies?

I do. I like my chicken to brown pretty firm

I only add a bunch of green onions, but only if I have em.

I made it yesterday. Flavor was good. There was a lot of extra oil but that was probably my fault for not draining after browning the sausage and chicken.

possibly but I do skim a bit of oil off, so prob the fault of the product. My deer sausage has almost zero fat, I do a pretty good job of sopping up the grease after the chicken browning. But thighs do hold a bunch a fat.
