agree... with all the water from the vegetables you're not getting any maillard reaction.

You must of missed the part where I said I browned the meat before adding the onions

No i think we just have a different definition of "browned".

Again, no one is saying your jambalaya isn't good. This is a food board; we like to talk about our methods.

Obviously. I just thought it was funny.

Great looking meal, though.

How many people did you have over? That’s enough food to feed an army! Everything looks amazing.

Thank you, I have a bad habit of cooking way too much food, originally was told about 150 people and I did the big pot of Jambalaya, 8 pounds of white beans, 25 pounds of fried catfish and added 75 boudin balls, I think they had a little less than 100 show up and everybody was able to bring home plenty

How much propane do you go through doing beans outside like that?

Sure. I’ll post pics of each step if someone’s interested. I’m sure I’ll cook one in the next 6 weeks or so.

I don’t know, but could not of been too much, browned (well cooked or whatever they say I did ) the onions, seared the ham and added the pre soaked beans and covered with water , brought to a boil and then turned the heat way down and cooked for a couple hours, dont think it made a dent in the propane tank, now the jet burner for the fish fryer ate up plenty of propane
