No shite!! I came here wondering how Sammy's made their fried cheese and leave wondering if Walt ate a dick, fully.

1) hand-cut Mozzarella cheese into 3/4 inch/3/4 inch "strips"
2) freeze
3) prepare milk/egg "wash"
4) crush up cornflakes and mix w/ breadcrumbs for the "breading"
after cooled solid (they don't have to be frozen all the way through)
5) get your oil hot
6) put cheese in egg wash, then roll in the breading (you can double coat them if you want)
7) fry in the oil until done (you might have a couple of small cheese eruptions)

Fry some halloumi or kasseri cheese instead. Way better than breaded mozzarella.

Buy mozzarella in a big block. Cut into sticks.
Prepare two buttermilk batters, a flour batter(seasoned. We used cayenne, powdered garlic, and salt), and a panko batter with italian seasoning (dried).
Dip cheese in buttermilk, then flour, then buttermilk, then panko.(make sure the sticks are fully coated by each) Line on wax paper on cooking sheet.
Stick in freezer for an hour or so. Keep in fridge after the batter and cheese set. Fry up.
Used to work in the prep kitchen there. This is the recipe.
