How often do you scrape the carbon buildup from cast iron?

When the outside of the 3 main cast iron skillets I use starts to look like gravel I pull out my favorite metal spatula and chisel the hell out of the outside using both hands.

I do this about once a year and it never ceases to amaze me how much buildup I get off of them.

Does all this carbon simply come from being in direct contact with the gas flame?

My cast iron skillet was starting to flake seasoning, so I took it down to the metal using Easy Off. Took several days and lots of reapplication, but it is like brand new.

Not in my opinion. You get that carbon/soot if you aren't burning a clean flame. If you're getting too much oxygen then your flame tips will be yellow. Close down the vents where your hose connects to the burner and you will start seeing a pretty blue flame. That's what a clean flame looks like and it won't impart that black soot buildup on the outside of your pots.

i think you may be right. this was a NG to propane conversion and i've definitely noticed yellow tips on the flames sometimes particularly right after i turn them on.
