How many different ways of Turkey leftovers?

The annual holiday dilemma of what to do with all of the leftovers is often a problem requiring some creativity. So far from the leftover Christmas turkey, I’ve had it as:
A meat and three (just turkey meat with leftover sides)
A po’boy
A pizza (with cranberry sauce and cream cheese as well)
As turkey salad
My mother used the carcass for turkey gumbo as well.
How has the board utilized their leftovers?

Turkey is way better than chicken in gumbo imo
There is also nothing better than leftover turkey on white bread with a little mayo

I didn't do it this year but in college and law school my mom used to take the leftover turkey, dressing, and gravy and put it in a casserole dish and top it with swiss cheese for me to take back to school, if gravy was short she would supplement with mushrooms and a can of cream of mushroom or chicken soup
