Trying to meal prep and I’m going to grill chicken tonight. Will it last from Monday night to Friday at lunch?

Easily. I've eaten 7 - 8 day old chicken with no ill effects.

Yes, assuming that you refrigerated it promptly after cooking. The length of time in fridge is less important than how long it sat around at an unsafe temp. You know how some ppl grill and then leave stuff out at room temp for 4 hours while everyone grazes, then sticks the leftovers in the fridge? Don’t do that.

General food safety guidelines recommend that ready to eat TCS food can be stored for a maximum of 7 days, including the day it was prepared, if held at or below 41°F.

Perfect.
What about stuff like broccoli?
I assume rice isn’t safe for 5 days or ground meats.
But if I could have five bowls of chicken and veggies ready for the week, it would help me tremendously.

Of course rice is fine after 5 days. LOL all of Acadiana would have died of food poisoning long ago if week old rice was unsafe to eat. Heat it up to steaming before eating.

I will eat week old rice without a second thought. I dont eat meat that has been cooked longer than 4 days. I am too cautious--one bad food poisoning episode scarred me for life!
