How long to tenderize Speckle belly geese in a gravy?

Been cooking down for 2 hours now and still tough, if I go 3, it should fall off da bone right baws?

I usually go like 3-4

Is it completely covered?

Speck breast eat like steak. Shouldn't be too much longer if you're cooking a whole bird.

I cut it all up, browned it down real good, added some Teet's Tasso and it's completely covered. It's smellin right, were gettin there.

The one I cooked the other day went about 3.5 hours. Whole bird. Fork tender. 'Teas awesome

brown them on the stove real good and then throw them in the oven.
