How long is andouille good for?

Cleaning out the fridge and came across half a pound of Savoie's in a zip lock bag. I am thinking it leftover from a small gumbo I made 4 weeks ago. I am leery but its a smoked cured meat and I am hungry.

Dunno how much preserves savoies uses.... But most smoked meats are good for long long time.

Taste a bite of it, if it tastes ok its fine.....bad sausage is obvious

My buddy makes Andouille and keeps it in the fridge for months. If its properly cured (smoked) its good for a long time.

It's savoies lol go to the store and buy some more... Not like its hard to find or even that good...

If you can't smell a distinct ammonia odor, it's perfectly edible after cooking to temp.
