How do you season outside of fried turkey?

Planning to inject. Should I rub oil in it before seasoning or just seasoning to skin?

I just use Cajun seasoning and sprinkle It on.

Pat it dry...then rub your favorite seasoning like Tony's.

First I make sure the turkey is as dry as I can get it. However, before I slip it in the oil, I'll take some of the oil and rub a light coating of it on the skin then season with Slap Ya Mama, black pepper and some garlic powder. The oil helps the seasoning stick better to the skin.

Next time brine it in a pound of dark brown sugar and a pound of kosher salt, dissolved in 6 quarts of warm water. Get a water cooler and place bird and solution in it and cover with ice to the top. Allow it 24 hours and take it out and pat it dry. You DO NOT need any additional seasoning, the salt/sugar solution is on point and keeps the bird incredibly moist. Once you try this you will never go back to injection. Another family member tried it and they seasoned the outside after drying b/c it looked "pale and unseasoned". Well it turned out to be like diving in the Dead Sea.
