I normally make about $300 at a time and freeze in ziplok bags of 25. Gotta be a better way. Anyone vac seal them? Thanks in advance

Freeze them on a tray first then vac seal. Since pre frozen they won't mush down when you vac seal.

Are you talking jus the shell?
When my mom makes she puts the heads in the gravy and freezes it in plastic Ziploc containers.

I'm lazy, I make the boulettes but don't bother stuffing into the heads. Just as tasty, way less work. I freeze the shaped, uncooked boulettes unwrapped on a baking sheet; once frozen, I put them into storage bags. This way, you can take out exactly the amount you need at a time & bake, then add to the bisque.

I would pre-freeze either in/with the gravy or pre-freeze separately and then vac seal as others have suggested.
