How come more restaurants don't use plate warmers?

Ate at a pretty highly reviewed seafood restaurant yesterday. Food was tasty but it wasn't as good as it would've been if it was brought out on a hot plate. Food temperature is the quickest way to make a meal less epic
Not necessarily piping arse hot like the plates at the Mexican restaurant beside the Applebee's, but at least not room temperature.

I almost always warm my plates for hot meals.
I also put salad plates and bowls in the fridge.
A gazillion years ago, I ate at Red Lobster a few times. The salad came in an ice cold bowl. Made a difference.

I'm all for bringing back the hot plates at Pancho's on Nicholson Drive (Baton Rouge for those that don't know), circa 1977

Seems to be a Darden restaurant group thing
We used to store the salad bowls in a freezer by the pantry station
