Houston folk specific salsa recipe.

I believe all of the locations are closed now, but there used to be a place called Cafe Red Onion. More Central American twist on the standard Mexican place. Was a solid place but not spectacular.

What was spectacular IMO was their pineapple salsa. Anybody work there or know someone who did? Is the recipe online somewhere? I assume it is fairly simple. Pineapple and cilantro with salt and pepper being the base of it. Just not sure on proportions and if there is extra sugar or another spice? Or jalapeño? It would be slight if any.

I've googled in the past with no luck. And my attempts were edible but not quite right.
