Homemade green salsa

6 tomatillos, halved
8 garlic cloves, smashed and peeled
4 scallions
2 jalapeño, de-seeded
Half a bunch of cilantro
Lightly coat everything in olive oil and season with salt and pepper. Roast everything except the cilantro on a sheet tray at 425 for 20 minutes or so. Blend together with cilantro and season to taste. Thin out with a little water if needed.

Good recipe. I’d do this and maybe add juice of 1 lime.

yes lime is definitely needed. and maybe some cumin
