Homemade Chili Con Queso

Has anyone messed around using sodium citrate to make a cheese sauce? I tried it last night to make homemade queso and I can't recommend this stuff enough. Instead of buying Velveeta or Mexican melting cheese, you can use good cheese and even mix varieties to get your mix how you want it. The sodium citrate prevents oily separation you usually get when melting cheese.
I sauteed some serrano, jalapeno, and habanero, set it aside. Mixed 10g of sodium citrate with a cup of water (you can use beer) and heated the water just shy of a boil. Mixed in 4 cups of cheese (3C monterey jack, 1C extra sharp cheddar) incrementally, mixing with an immersion blender. When done, tossed in about a cup and a half of diced tomatoes, the sauteed peppers, and 1/4 chopped cilantro.
Soooo damn good. Highly recommend hopping on Amazon and snagging some sodium citrate for your pantry, especially with football season coming up.

IS there a ROT when adding sodium citrate? you mention 10 mg to a cup of water? Is it something you have to add in doses?

Nah, just dissolve 10 grams into a cup of water or beer before adding any cheese.
