Hoghead cheese shelf life

Had some in the back of the fridge. Vacuum sealed and not too old (1/28) but looks quite a bit darker. I think it is still good but has anyone ever had some go bad on them? If so, how old was it?

I'd eat it... As long as it doesn't smell rancid.

No sell by which was surprising but it is from a meat market and they don’t seem to always put them on there.

I hate stomach issues...I'd feed the dogs.
And I make the stuff once in a while When I open a package, I'll either eat it or dump it in five days.
