I've got an old recipe posted in the Recipe Book above. I follow that general method, for the most part. I go pretty heavy on fresh peppers and nailed the flavor I want pretty good this time. Mine isn't true HHC as I'm not using a hogs head. Instead, I use a Boston butt and some other pork...in this case, I had a 5 lb butt and @2.5 pounds of loin to cook down. Loaded up on gelatin to be sure it set up right.

Does it freeze well? I'd like to make some but couldn't eat it all at once

This has always been my problem with HHC. I love the flavor, but the gelatin texture is too offputting to me. Saias in Mandeville has one that I love, because the mince the meat so that it is evenly distributed throughout the gelatin mixture. There are never any pockets of gelatin to throw off the texture. It's killer.
Yours looks great though, so I don't mean any of that as a dig at your finished product. I'd definitely eat that.

Yep. Freezes okay. Doesn't change the flavor and the texture isn't affected much.
