Help Me Cook A Goose

So I scored a nice size speckle belly on my first goose hunt yesterday and I’m looking for the best way to cook this bad boy. I’ll happily take recommendations or recipes.

Smoke the breast to about 135 degrees and slice paper thin across the grain, some of the best eating wild game out there

Is it whole and plucked? Or do you just have the breasted meat?

Personally, I’d prefer smoked or grilled to 125F in the center of the breast. Pull and tent with foil. Rest 10 min. Carryover should get you to 130-132F. Proceed as above. Excellent fare. Congrats in bagging one of the few types of “flying ribeye”. Sandhills being the other. Neck and neck as to which is best. Only caveat is that it be cooked rare.

We had it plucked and dressed. I’ve got a miniature Turkey in my fridge right now. Actually three.

Can’t tell you what to do because someone’ll be along with a great recipe for whole bird. My experience with wildfowl though, is that legs and thighs cook at very different speeds. So, I would separate the bone-in breast from leg and thigh. Cook those liw and slow

I prefer the whole bird. A whole, plucked Spec is awesome. Follow the Roasted Duck with Sausage and Apples recipe at page 140 of the Recipe Book above. the recipe was actually created for Specs. Just increase the cook time to 3 hours for a goose (or two depending on the size of your roaster).
