Heading to Phoenix / Scottsdale, restaurant recommendations?

So far, this is what I have gathered. Which restaurant am I missing? Which should I exclude (from list below)?
Scottsdale
• Bandera (same place as the one I visited in Chicago / appears to be a small chain, similar to Houston’s or J Alexanders)
• Pig & Pickle
• The Blind Pig
• Citizen’s Public House
• Roaring Fork (have a location that I have visited in Austin near Arboretum, may be a chain?)
• Hopdoddy Burger Bar (have a location that I have visited in Austin and Dallas – may be a chain?)
• Delfaco’s Italian Grocery
• Oregano’s
Phoenix
• Steak 44
• The Capital Grille (quality chain, have eaten at location in Naples, FL and Houston)
• Hillstone (appears similar to Houston, J Alexanders or Bandera)
• Wright’s at the Biltmore (Chocolate Soufflé)
• The Arrogant Butcher
We're staying at the Arizona Biltmore and will be celebrating our wedding anniversary in August. So one night, I would like to go to a "nicer, upscale" restaurant for this occasion. My wife is more of a meat and potatoes lady, as she will shy away from restaurants that serve seafood that aren't located in Louisiana.

Elements on Camelback mountain. Food is solid and the views are amazing.

The Mission is a great Mexican restaurant and best to have reservations
