Lately the crust on my sourdough bread is hard and tough to cut. I'm using the same recipe I've had for a couple years but obviously I'm doing something wrong some where.

Any thought

Are you baking it in a Dutch oven?

Yes, same as always, buy last few times I've been getting this hard crust that's difficult to slice through.

Do you use steam in your baking process?

Just what the Dutch Oven provides. This problem just started with my last few bakes.
I'm trying a different recipe tomorrow.

toss an ice cube in your preheated dutch oven before you put your proofed dough in there

it'll give you better oven spring and a better crust
