I saw wahoo in a Florida fish place while on vacation. Was excited to bring it back to the condo to cook. Meh.

Pompano is my favorite fish, followed by butterfish and then triple tail. Best pompano I’ve had is at Lusco’s in Greenwood MS

Hard to beat some good fried smelts. Waka House in BR used to sell them but I don’t think they do anymore. Not sure of anyone who does.

Have 3 places in Port Aransas. Kodys and Giggitys. Also have Shortys but that’s just a bar.

I can do amberjack up real good but has to be cleaned well kept iced and not old. Wahoo is real firm and dry. I would agree not my favorite. Fresh swordfish is outstanding. We cook people’s catch and from time to time we get some swordfish brought in. I get some fresh pompano occasionally. Grill it whole skin on seasoned. A great dish.
People here call Cobia, Ling. Great fish. See some in the summer months. Sheepshead is a wonderful fried fish.

Manager might not even know what he was sold. Purveyors show up selling all kinds of things. I know fish pretty well. That’s why I knew the triple tail he was trying to sell me wasn’t what he said it was. That might be what they called it for what ever reason but it wasn’t what they said it was. I have never seen triple tail in abundance. I have never heard of people catching more than one or two at a time around here. And usually they spear them. I am not calling anyone a liar. Just saying it’s highly unlikely that was triple tail.

Should have been more clear with what I said.

I use the flounder with our cornmeal breading hence “southern fried”.

My reference to the catfish was when I see it on a menu in restaurants I ask is this catfish. Seemed like for a while every other restaurant in Louisiana or even Texas was serving Asian what ever as catfish. I don’t eat Asian fish.

From time to time I get some farm raised 3 to 5oz catfish. I have tuned my recipe over the years and it’s about perfect now.

Sheepshead is great fish. Snow birds bring in lots during the winter. The shelf life isn’t the best though.
