I’d say closer to giblets. They were soft enough to cut with a fork and melted in your mouth.

Honestly if you didn’t know it was pancreas, you’d eat it without thinking.

I'm glad I've tried St. John's but it's not a place I'd ever go again.

Can I ask which one you went to? Was it Smithfield or Bread and Wine?

I actually found the food to be very reasonably priced, but I’m very glad to hear you aren’t being forced to pay for a meal you don’t want to eat.

Yes, because like most places in London, a standard gratuity was already included in the bill.

And when you sign the receipt, there isn’t even a line for an additional tip. They do it correctly.

I had the same question and giggled like a child when I read it.

I had to look it up, but apparently it is:

“A **** is traditionally made from pig's heart, liver and fatty belly meat or bacon minced together, with herbs added for flavouring and sometimes bread crumbs.”

Isn’t it a great place? Food focused, not about the room or the lighting or decor or any other BS. I also had the crispy pigs ear salad—and an incredible snail dish, I’d also forgotten until your post caused me to look back thru my food pics. But it is the beef heart that stands out in my memory.

Sigh. Makes me want to hop on a plane to London.

Also, St John does a lovely Wednesday wine pour....anyone who comes in gets a free glass of whatever’s being poured that day. The idea is to introduce ppl to things they might not try....and who doesn’t like free?

It really was excellent. I really appreciate the suggestion.

After your recommendation, it was on my list. Then I watched Anthony Bourdain's No Reservations: London episode for inspiration and St. John Smithfield was the first place he went. He described it as one of his favorite restaurants in the world.

That sealed the deal.

Had a delicious, long lunch at St. John on a Sunday afternoon two springs ago. Favorite dish was probably the Welsh Rarebit with a glass of Fernet.
