Gumbo time today. Had to pay $12 /lb for andouille here in Chattanooga

Yea, had to go to butcher shop; no grocery store items here.

Wife headed back to LA for the ole miss game. Guess going to get her to get 5-6 lbs while at it.

If you need some good andouille for less than $12/lb, check out Teet's Food Store, and their pure pork sausage is the best.

I found savoie's at the new publix on n. market on friday. 6.99/pkg. Whole Foods & Fresh Market both had some that was made in house. was looking for jar roux{no luck].

Paul Prudhomme's original recipe recommends kielbasa in place of andouille if you don't have it. I've never used it, though, so I don't know how it compares. A decent smoked sausage will work as well. Sometimes, I use smoked sausage rather than andouille in turkey gumbo or when I know some of my eaters are going to be pepper sensitive like kids. A good smoked sausage makes very good gumbo.

Which of Teet's sausages do folks use for gumbo? Pure smoked pork? Andouille?

I called Teets and they told be their pure pork sausage has heavier smoke than the andouille just a different grind. I'm going with the pure pork

I just ordered both, but more of the pure pork than andouille. Which is a smaller grind?

I'd love to try some, but the cheapest shipping method is $30+. I can't justify paying $30 for shipping on $20 worth of meat.

Actually, the cheapest shipping method was 44 bucks which includes the cooler. I bought $120 worth of meats. Shipping is a lot less then me driving there to pick it up, in time and money.
