Grilled Shrimp Marinade Recipe?

I want to grill some shrimp and need recipe for a marinade....I like big, bold flavors and plan to grill on a mesquite grill with pretty heavy smoke...

Be careful if you are using an acid in the marinade. Don't let them sit in it very long. They'll start to cook and the texture will be unpleasant if you then grill them.

thanks...I actually saw that in the first recipe that used orange juice, it said to let them marinate no more than three hours....that explains why...

I wouldn't go over two hours myself and I would probably limit it to one. I've had partially "pre-coooked" shrimp/ceviche before which has been fully cooked later and the result is not good. I don't marinate them at all for that reason. I'll toss them in spices and oils, but no acid.

interesting...maybe I will let them sit in the spices and oil a bit, but brush on the acid while on the grill or immediately afterwards just for the flavoring....

of course, I could use lemon pepper or something like that for the flavor without the cooking...

You could do that for a good while and maybe add the acid in the last 30 minutes. The heavy smoke is probably going to be stronger than the seasoning flavors.

ETA: Here's a recipe for shrimp ceviche. It marinates for only 15 minutes. Another I saw marinates for just 10. There's probably more acid than what you're using, however, but you can see why I'm a bit cautious.

I like a batali recipe where you coat the shrimp in a pesto thickened with good bread crumbs and lots of oil. You then grill the shrimp (works well with pork, chicken thighs, etc...) and you get this flavorful shrimp and this nice chard, bready crust. Its an awesome dish with a nice salad or simple pasta and some white wine.
