Gumbo:

Chicken & Andouille - Dempseys
Seafood - Dons on Airline

Etouffee - Not many great places. Brunet's is probably closest to what Im used to.

Boudin - Ronnie's on Florida get the Smoked Boudin and the boudin balls

Jambalaya - Jampalaya Shoppe (Perkins location only and choose pork)

Seafood - Louisiana Lagniappe

Completely disagree.

Ronnie's definitly has good boudin. If you like Best Stop's boudin then you should like Ronnie's since its identical. I still prefer Ronnie's Boudin Balls over ANYWHERE else in the state.

Bergeron's in Port Allen also has good boudin and very good sausage. Some people like Jerry Lee's Im not a fan though.

I'm just stirring up trouble.

Search out the Gumbo thread. We had guys tracing their cajun roots back to the 1700's. Great stuff!

My uncle recently sent me his most recent edition of the family tree and it goes all the way back to france in the late 1400s/early 1500s.

Celery is a part of the trinity..(Onions, Celery, and Bell Peppers)


Who half asses the basic aeromatics, and if you don't put celery in gumbo, then I guess the only thing that's "approved" is onions, roux, chicken, andouille, and stock?

Silly if you ask me. I honestly don't know a soul who doesn't put celery in their gumbo.

Agree with all this. Once AGAIN, I'm dealing with tons of people from out of town this holiday season who think Chimes is the best restaurant ever placed on the planet and visit every day during their stay in BR.

What I find funny about that thread is people attributing rules to a low country comfort dish that people put whatever they had on hand in the pot to feed themselves with, especially one that is French in origin and celery is as much a part of it as is the base(roux).


I have to believe that if cajuns had something on hand, it went in the pot. If not, then it didn't. Food to me is an ever evolving thing, and while there are things that are just "no no's" because they just don't work well together, an aeromatic like celery for goodness sakes certainly isn't one of them.

I think you're missing my point. I'm not saying that Baton Rouge doesn't have good Boudin. But if I were in Baton Rouge for only a few days and only had a limited number of trips to make, I wouldn't make one of them for Boudin. You can get frozen Boudin delivered to your doorstep from the best. Why would you waste a dining experience to drive to Florida Blvd of all places to get Boudin?

I would put Ronnies up there in some of the best category as well. Have you had it?

You do know Best Stop in Scott is one of the top rated places in the state and Ronnies is pretty much the same recipe right? While I do have some others I prefer over Ronnies and Best Stop its not like you are getting boudin that isnt very good. Some people drive from Baton Rouge to Scott to get Best Stop's boudin when they have the same stuff here and they dont even know it.

No such thing.... Frozen and the best...
Boudin does not freeze well IMO

I have tried nearly every boudin in south Louisiana..

Ronnie would rate near the top 5.. also IMO

Ronnie's is the best place to get boudin in Baton Rouge. Florida Blvd. just before Sharp Rd. They also have other Louisiana specialty items.

Chris' Specialty Meats buys their boudin from Ronnie's. It is identical and quite good.
