Got some Short Ribs at Costco

Just put them in the slow cooker. First time using this recipe. I might be killing my dog with the smell in the kitchen. Cooking with some thyme, bay leaf, onion, carrots,beef broth and red wine tomato paste and garlic reduction. Just gotta wait about 7hrs now.

Were they Korean-style cut, or a traditional rib cut?
I've been trying to find some traditional "rib" cut short ribs but all the ones I run across are cut for Korean-style short ribs.

Excellent. I'd prefer bone-on, but that will work too. Looks like I need to head to Costco.

I buy these for smoking. However they may have shorter sectioned short ribs for braising available at Costco. I imagine the butcher dept. could cut them how you like if you asked.

If you don't want the plate of ribs,anyone will cut them as you please,just ask.

I think I'm just going to bite the bullet and go to my local butcher (Ole Timey Meats on Rosewood for you Cola baws) and tell them exactly what I want. Amazing butchers and great quality meat, but you pay for it.

Yup. I bought beef short ribs a while back and smoked them.
Came out like this, were delicious and surprisingly tender. Very rich, though. Could only eat two in one sitting, as opposed to pork ribs where I can hammer away half a rack during a CFB commercial break.

If they are boneless, they were most probably cut from the chuck. This is what they generally push off as “boneless short rib”. Awesome for braising
