Can I wrap in a soft tortilla and put in the air fryer. Liking to crisp it up with some quest on top???

We are 100% in agreement. It’s the only thing I order there. Who doesn’t love their Mexi-slop to be deep fried??

I don’t think chicken “crisps” unless it has fat in it. Fajita chicken isn’t going to do that.
If you want to reheat it without drying it out, put it in your cast iron with some butter or grease drippings.

You can rinse off the chicken, dry it, then marinate in this for a few hours.
Cook over low flame or bake in oven at 275°
Grace serves a hot version, but I found it so blazing hot I cannot enjoy the allspice and sugar that makes jerk seasoning so delicious.

I much prefer the Walkerswood to Grace if you have access to both.

Agree with Lou on this one.

What does the OT say about this?

I tried. Basically like a toasted tortilla shell. Could have done in the oven

But it was good. With some warm queso
