As someone mentioned about emulsifying.. oven sauce, the ingredients just heat and melt. They tend to stay separate. Stovetop where butter is slowly added over low heat with lots of stirring actually emulsifies together.

Roasted corn grits or mashed potatoes. Or occasionally angel hair. None of those are true sides as I serve the shrimp on a bed of one of them. Make enough sauce to be able to spoon some over the bed of choice. A salad or roasted brussels sprouts are a good opener.
