I cooked a deli style roast for sandwiches this weekend. It lacked some seasoning even though I seasoned it pretty good.

Are you asking for a deli roast brine? Or just in general? I don’t know that I brine my roasts much at all.

Brining won't season the meat.
Spice molecules aren't small enough to penetrate the meat.
If you want to retain more of the natural juices, I recommend dry brining.

Half cup salt half cup granulated sugar per gallon of water used. Works great on poultry and pork. Generally don’t brine beef.
